Taken from the Westcoaster Seafood Cookbook
Ingredients:
4 (4-6 oz 115-170 g ea) halibut steaks
2 Tbsp (30 ml) melted butter OR olive oil
2 Tbsp (30 ml) lemon juice
Fresh dill OR parsley sprigs
Lemon wedges
Method:
Lightly grease a broiler pan. Place steaks on pan and brush with melted butter or oil. Drizzle with lemon juice.
Broil
steaks 4-6 inch (10-15 cm) from the heat source, for 6 minutes on first side, turn, baste with marinade and broil for about another 6 minutes or until the fish flakes when fork-tested, is opaque and nicely browned.
Place steaks on warmed serving platter. Garnish with dill or parsley and lemon wedges.
Serves 4.
