Winning Photo features fish!
go2 - BC’s tourism industry human resources organization – is pleased to announce that The Lodge Tahsis Harbour is the winner of the 2009 Tourism Week Photo Contest.
Fillet the fish and place the fillets on tin foil skin side down. Try to get even sized fillets so that cooking times for each piece is the same.
Sauce:
1. Half a cup of mayonnaise
2. Half cup of Brown sugar (Rogers refined works well)
3. Two tablespoons of Teriyaki sauce ( add more or less to taste)
Directions:
Heat up the barbeque and place the tin foil with the fillets on it on the grill.
Mix these ingredients up well and baste generously on to the fillets.
Make as much as you need for the fillets you are cooking. You can increase or decrease these amounts depending on the amount you are cooking.
You will need to reapply the sauce as the salmon is cooking.
I also add a generous sprinkling of Spicy Pepper medley to the filets.
Don't overcook the salmon!
